Hi everyone and welcome back! I polled many of you on Instagram a few weeks ago to see if you'd like the recipe for my Chicken Tortilla Soup and it was an overwhelming yes! I'm not sure about you, but soup in the fall is an absolute comfort food for me and always tastes just a little bit better during this season. So without further delay, here is the recipe.

Ingredients:
-1 lb shredded rotisserie chicken
-10 oz enchilada sauce
-1 can black beans (drained)
1 can/ 4oz green chiles
-1 can of fire roasted tomatoes
-3 cups chicken broth
-1 lime juiced
-1 tablespoon minced garlic
-2 jalapeƱos sliced
-1/4 tablespoon onion salt
-1/2 tablespoon chile powder (I used Trader Joe's chile lime)
-pinch of salt and pepper
-1 cup water
- chopped cilantro to taste

How to make:
Put all ingredients into a dutch oven or large pot on the stove top. 
Once all ingredients are added, cover pot and bring to a boil.
Once the soup is boiling reduce heat to low and let simmer for about 40-45 minutes. 
*If ingredients start to boil up too high remove lid for the remainder of cooking.
Once the time is up, remove the soup from the burner, scoop into a bowl and then 
top it with any fixings you like (I usually use sour cream, avocado, and tortilla strips).
This soup is so easy to make and is the perfect fall staple! Have a great rest of your week everyone & enjoy!

Carmel Apple Mule

Fall is in full throttle and I am soaking up every opportunity to celebrate it! I am a huge fan of Moscow mules and decided to do a fun fall take on the traditional version. This drink brings you the taste of a caramel apple, making it the perfect boozy fall treat.

Ingredients needed:
2 oz vodka (I used Tito's)
1/2 cup apple cider
3/4 cup ginger beer (I used Goslings)
1 cinnamon stick
Caramel sauce ( the kind you can find in a jar or bottle)
1 apple
Sprinkle of pumpkin spice seasoning

How to make it:
Grab a medium sized glass. Add 2 oz of vodka, followed by 3/4 cup of ginger beer, and a half cup of apple cider. I bought my cider from an orchard which I think makes the drink that much better, but any kind will work. Next add a cinnamon stick and mix the drink. Now take your caramel and drizzled the rim of your glass, add a few slices of apples into your drink and then top it with some pumpkin pie spice for a little extra flavor. Drop in a few cubes of ice and enjoy!
